Low-Carb Panna Cotta

A classic dish from the Italian kitchen, our low-carb Panna Cotta is a fresh and creamy dessert that is the perfect accompaniment after a heavy meal. Top each serving with a few berries and a mint leaf for that extra touch!

  • Put the gelatine leaves in a bowl of cold water to soften.
  • Split the vanilla pod and scrape out the seeds.
  • Add the cream, milk, vanilla pod, vanilla seeds and sweetener into a saucepan over medium heat.
  • Heat gently and stir until the granulated sweetener has dissolved.
  • Remove the gelatine leaves from the water, squeeze out any excess liquid and add one at a time to the cream mixture. Stir until dissolved.
  • Once the gelatine has dissolved completely, remove the vanilla pod and pour the mixture into individual serving bowls.
  • Leave to set in the fridge for 3 - 4 hours.
  • Top with some blueberries and a mint leaf.

Notes

Try adding some frozen berries, full-fat yoghurt and 1 tbsp Stevia & Erythritol in a blender, mix and pour over the Panna Cotta. Delicious!
