Ingredients
- 300 ml Double cream
- 200 ml Whole milk
- 3 tbsp Stevia & erythritol
- 2 leaves Gelatine
- 1 pod Vanilla
Instructions
- Put the gelatine leaves in a bowl of cold water to soften.
- Split the vanilla pod and scrape out the seeds.
- Add the cream, milk, vanilla pod, vanilla seeds and sweetener into a saucepan over medium heat.
- Heat gently and stir until the granulated sweetener has dissolved.
- Remove the gelatine leaves from the water, squeeze out any excess liquid and add one at a time to the cream mixture. Stir until dissolved.
- Once the gelatine has dissolved completely, remove the vanilla pod and pour the mixture into individual serving bowls.
- Leave to set in the fridge for 3 - 4 hours.
- Top with some blueberries and a mint leaf.
Notes
Try adding some frozen berries, full-fat yoghurt and 1 tbsp Stevia & Erythritol in a blender, mix and pour over the Panna Cotta. Delicious!
